This is a rather easy recipe for an avocado cupcake. it is almost savory but very tasty. The frosting in the recipe make a lot and is almost too sweet. i will be re-doing the frosting. to tone it down some

Cupcake

  • 1 ‏avocado
  • 1 ‏egg
  • 3/4 cup ‏buttermilk
  • 2 tbsp ‏unsalted butter
  • 1 1/2 cup ‏all-purpose flour
  • 1/2 cup ‏sugar
  • 1/2 cup ‏brown sugar, packed
  • 1 tsp ‏baking powder
  • 1/2 tsp ‏baking soda
  • 1/2 tsp ‏salt
  • 2 tsp ‏vanilla extract

directions

  1. preheat over to 350°
  2. line 12 muffin tins with paper liners
  3. in a large bowl; mix flour, baking powder, baking soda, and salt together; set aside
  4. cream avocado, butter, and sugar together
  5. reduce speed, add egg, buttermilk, and vanilla and continue to mix
  6. slowly add flour mixture
  7. spoon into cupcake pan evenly, about 3/4 full
  8. bake for 20-25 minutes; until tester comes out clean
  9. remove from oven, cool pan for 5 minutes then remove cupcakes to cooling rack
  10. allow to cool completely before frosting

Avocado Frosting

  • 1 ‏avocado
  • 3 cups ‏powdered sugar
  • 2 tbsp ‏unsalted butter
  • 1 tsp ‏vanilla extract
  • pinch ‏salt

Directions

  1. cream avocado and butter
  2. add vanilla and salt
  3. slowly add powdered sugar till combined completely.
