Cupcake

Rolled Oats 1/2 cup
Boiling Water 3/4 cup
Egg 2
unsalted butter, softened 1 stick
Sugar 1/2 cup
Brown Suger, packed 1/2 cup
vanilla extract 1 tsp
all-purpose flour 1 cup
baking soda 1/2 tsp
baking powder 1/4 tsp
Ground cinnamon 1 tsp
ground nutmeg 1/4 tsp
salt 1/2 tsp

Directions:

  1. In a mixing bowl, combine rolled oats and boiling water, let stand for 20 minutes
  2. pre-heat over to 350° and line cupcake pan with paper liners
  3. cream butter and sugar together
  4. slowly add eggs
  5. in separate bowl, combine flour, baking soda, baking powder, cinnamon, and nutmeg
  6. combine with oat mixture.
  7. add to butter mixture and mix
  8. fill cupcake liners about 2/3 full
  9. bake 15-20 minutes, untill tester comes out clean
  10. let cool before frosting

Frosting

unsalted butter, melted 3 tbps
brown sugar, packed 1/3 tsp
pecans, chopped 1/2 cup
coconut 1/2 cup
coconut milk 1 tsp

Directions:

  1. combine all ingredients and mix throughly
