Cupcake

  • 1/2 cup ‏Rolled Oats
  • 3/4 cup ‏Boiling Water
  • 2 ‏Egg
  • 1 stick ‏unsalted butter, softened
  • 1/2 cup ‏Sugar
  • 1/2 cup ‏Brown Suger, packed
  • 1 tsp ‏vanilla extract
  • 1 cup ‏all-purpose flour
  • 1/2 tsp ‏baking soda
  • 1/4 tsp ‏baking powder
  • 1 tsp ‏Ground cinnamon
  • 1/4 tsp ‏ground nutmeg
  • 1/2 tsp ‏salt

Directions:

  1. In a mixing bowl, combine rolled oats and boiling water, let stand for 20 minutes
  2. pre-heat over to 350° and line cupcake pan with paper liners
  3. cream butter and sugar together
  4. slowly add eggs
  5. in separate bowl, combine flour, baking soda, baking powder, cinnamon, and nutmeg
  6. combine with oat mixture.
  7. add to butter mixture and mix
  8. fill cupcake liners about 2/3 full
  9. bake 15-20 minutes, untill tester comes out clean
  10. let cool before frosting

Frosting

  • 3 tbps ‏unsalted butter, melted
  • 1/3 tsp ‏brown sugar, packed
  • 1/2 cup ‏pecans, chopped
  • 1/2 cup ‏coconut
  • 1 tsp ‏coconut milk

Directions:

  1. combine all ingredients and mix throughly
